Grilled Salmon
(Serves 4)
4 salmon steaks, @ 6 ounces each
1/4 cup Sciabica's or Marsala Extra Virgin Olive Oil
grated peel of 1 lemon
2 tablespoons fresh rosemary, minced
1/2 teaspoon cumin
1/4 cup fresh basil and/or parsley, minced
2 garlic cloves, minced
Brush steaks with olive oil. Combine remaining ingredients and spread the mixture on both sides.
Preheat grill on high. Grill on medium high for 3 to 4 minutes on each side, starting with the skin side if the steaks have skin.
Serve with corn salsa (recipe below).
Corn Salsa
(Makes about 3 1/2 cups)
2 cups fresh or canned corn
1 avocado, diced
2 tomatoes, diced
1 cup bocconcini (small fresh mozzarella balls)
1/2 cup fresh basil and/or parsley, chopped
2 green onions, chopped
2 garlic cloves, minced
1/4 cup lemon juice
1/2 teaspoon cumin
salt and pepper to taste
Combine all ingredients in a serving bowl. Keep refrigerated until ready to serve.
