Dana Johnson's culinary expertise combined with the Sciabica Family's premium olive oil resluted in simply mouthwatering dishes. If you'd like to make these dishes at home, here are the recipes. Enjoy!

 

Dana’s Quick Pasta

1 lb cooked pasta of choice
¼ cup Sciabica’s Garlic Olive Oil
¼ cup Sciabica’s Basil Olive Oil
1/8 cup Sciabica’s Rosemary Olive Oil
4oz. can drained sliced olives

Mix olive oils together. Toss pasta in blended olive oils. Add sliced olives. Top with parmesan cheese. Serve warm or chilled.

Possible add ons: Grilled chicken breast bites, salami slices, artichoke hearts, or perhaps asparagus.


Dana’s Quick Bean Salad

2 14oz. cans kidney beans (drained & rinsed)
2 14oz, cans garbanzo beans (drained & rinsed)
1 8oz. can diced tomatoes (drained)
¼ cup Sciabica’s Garlic Olive Oil
¼ cup Sciabica’s Basil Olive Oil
1/8 cup Sciabica’s Rosemary Olive Oil

Gently combine all ingredients. Top with parmesan cheese. Great on salads or on its own!


Dana’s Spicy Corn Salsa

1 14oz. can corn kernels (drained)
1 14oz. can black beans (rinsed & drained)
1 8oz. can diced tomatoes (drained)
1/8 cup Sciabica’s Habanero Olive Oil
1/8 cup Sciabica’s Jalapeno Olive Oil
2 tbsp. Sciabica’s Lime Oil

Combine all ingredients. Serve with tortilla chips or use on top of a salad!


Dana’s Mexican Salad

Dressing:
2 oz. tomato puree
2 tbsp Sciabica’s Habanero Olive Oil
2 tbsp Sciabica’s Jalapeno Olive Oil
1 tbsp. Sciabica’s Lime Oil
2 tsp fresh chopped cilantro

Whisk all ingredients together. Chill in refrigerator for 30 min.

Salad:
Sautee bites size pieces of boneless skinless chicken breasts in Sciabica’s Habanero Olive Oil. For the lettuce, use romaine or iceberg. Make your own corn tortilla croutons with corn tortilla thin sliced strips fried in Sciabica’s Lime Olive Oil until crisp. Use paper towels to remove excess oil.


Dana’s Asian Orange Cold Salad

3 packages of ramen noodles (boiled & drained). Discard seasoning packet.
1 8oz. can mandarin oranges (drained)
1 4oz. can water chestnuts (drained & chopped)
½ cup crispy Asian chow mein noodles

Combine all ingredients.

Asian Dressing:
½ cup Sciabica’s Orange Olive Oil
¼ cup low sodium soy sauce
2tsp ground ginger

Pour dressing over salad & gently toss until well coated. Chill 30 minutes in refrigerator.
Consider adding ½ cup shredded red & green cabbage.
