Plump, ripe limes are pressed together with fresh-harvested olives to create a delectable oil that perfectly balances lime’s tangy tartness with rich olive flavors. Use it to enhance herb-crusted fish, and grilled or roasted chicken, and to jazz up salsa and guacamole.

Chunky Avocado Lime Salsa
Found on page 65 in Gemma Sciabica's Popular Recipes Cookbook
(Makes about 3 cups)


2 avocados, diced
1/4 cup Sciabica's Lime Olive Oil
2 tomatoes, chopped
1/4 cup fresh cilantro, parsley, mint or basil, chopped
1 cup olives, pimiento, sliced
4 green onions (white part) sliced thin
1/4 cup dried tomatoes, crumbled
2 radishes, chopped
2 cilantro springs


In a serving dish, combine all ingredients, keep refrigerated until ready to serve. Garnish with sprigs of cilantro.

    Use to pan fry fish, on vegetables, and as a dressing on salad. I just ordered a bigger bottle!!!


  2. Sweet potato fries + lime oil = yum

    Peel and chop sweet potatoes into chunky fries. Toss in lime olive oil and bake at 450' for 25-30 minutes. Turn half way through cooking. Add salt and pepper if you wish.

    I won't eat an avocado without it, any more. This stuff is so delicious! It's positively finger-licking good. I plan on keeping a 12.7 oz bottle in my pantry at all times.

    My absolute favorite, wonderful flavor, terrifically versatile: dress a salad of fruits or veggies; marinate chicken, fish, or meat; baste anything on the grill. Use alone or combine with herbs, vinegar, or fruit juice. Great fragrance of lively limes in any season.

    This is the best for salad dressing! And I don't mean mixed with other ingredients, either. Ever since I first tried this oil, it's all I put on my salad. No balsamic needed... It smells fantastic too.

    Oh, I've also used it to brush on salmon before baking. Yum.
