Our flagship olive oil, produced on the land Nicola Sciabica purchased in 1925 and started producing olive oil on in 1936. A full flavored olive oil with a smooth, creamy finish. Slightly greener than previous years, it has a pizzicante finish and is a delight to use on salads, pasta and bread.
In 1925 Nick Sciabica purchased a grape vineyard in Modesto California; 11 years later he began pressing olive oil on that property. In 2002, the Sciabicas pulled out half of the grapes and planted 7 varieties of olive trees. This Estate Pressing of those olives, dubbed Hill Side 7, has a smooth and creamy flavor, it is left unfiltered to retain the robust flavor of the olive.
