In a given season, we have several batches from a particular variety. We then hand select the best batch from that season, set it aside and leave it unfiltered. We also offer the olive oil as soon as it is pressed (Fresh Pressed), often called "Olio Nuevo".
Keep in mind that although Fresh Pressed Unfiltered Olive Oil will always have a fuller flavor, fresh Fall Harvest olive oil is of particular interest in the 2-3 months following the press; meaning it will have a deep green color and a distinct fresh flavor October through January.
